fix(docker): fix cgit clone-prefix 



Additionally, clone-prefix is now configurable via environment variables:

- CGIT_CLONE_PREFIX_PHP
- CGIT_CLONE_PREFIX_FASTAPI

These vars can be used by production to customize the clone prefix.
