Add GDK_BACKEND=x11 to .desktop to prevent memory leaks

When Audacity is recording under Wayland, it suffers severe memory leaks, as documented here and here. Adding GDK_BACKEND=x11
to the Exec line in /usr/share/applications/audacity.desktop would solve this issue until upstream finishes rewriting the gui layer.
