  Remove sodeps from makedepends

Top-level (not in a package function) sodeps are a bad idea. Because
they lack version bounds, they can pull in deps from the wrong
architecture (e.g. `libffi.so=8-64` vs `libffi.so=8-32`).

Return the `main` branch to the stable state. The `gnome-unstable`
branch is for `gnome-unstable`.

devtools 20230105-1 enables the debug option by default.

A follow-up commit will remove debug from alongside other options.
