Move top-level sodepends to overrides in package(), as top-level
sodepends may pull in dependencies of other bitness.

Remove sodep for libassuan.so, as it prevents upgrading libassuan to
3.0.0 (which introduces a soname change) in staging.

The 'gcr-4' library does not provide a UI itself, rather rely on the D-Bus
interface 'org.gnome.keyring.SystemPrompter', which is provided by 'gnome-shell'
and 'gcr' 3 (gcr-prompter). So users outside of GNOME need to install the 'gcr' 3
package anyway. 'pinentry-gnome3' can be linked with both 'gcr' 3 and 'gcr-4', so
just build with 'gcr' 3 for now.

Upstream prefers gcr-4 over gcr-3.

Without kguiaddons and kwindowsystem, there are warnings in the build precess.

Add them as makedepends and optdepends.

* Drop pinentry-gtk2; GTK 2 has been EOL'ed in 2020.
* Update pinentry wrapper to pick -gnome3, -qt, and -qt5 backends by default.
* Remove /etc/pinentry/preexec from package (but continue to execute).
