Replace Redis with Valkey

Description:

Redis recently announced that version of 7.4 will be licensed under the RSALv2 and SSPLv1, neither of which are OSI Approved and therefore not considered open source.

Meanwhile, the Linux Foundation has forked Redis 7.2.4 into a new project, Valkey, which will maintain the BSD license and is backed by Amazon Web Services (AWS), Google Cloud, Oracle, Ericsson, and Snap Inc.

There was similar discussion around MongoDB when it changed its license to the SSPL back in 2019, however the package ended up getting dropped to the AUR at that time as the TU "...did not use MongoDB for quite some time anyway."
