gzip needs the -n / --no-name option to avoid recording non-determistic info in metadata (e.g. timestamps). Regardless, there's no need to compress man pages during build, makepkg does so already (in a reproducible builds friendly way).

Also document reliance on sudo config files. Fixes #1
