Update optdepends and makedepends

• version 6.0 has changed the optional dependencies: https://github.com/plotly/plotly.py/blob/v6.0.0/packages/python/plotly/requires-optional.txt
• jupyterlab-3 is not required, although upstream still specifies it: https://github.com/plotly/plotly.py/issues/4354#issuecomment-2632173274
• add some flags for pytest to make it nicer
